Tartare of sea bass, citrus oil and breadsticksPrint the sheet >

(serves 6)

Ingredients :
Breadsticks (makes approx. 20)
- 1 tsp of yeast
- 300 g plain flour
- 1 tsp of salt
- 16 cl of water
- 1 tbsp of olive oil
- 2 tbsp of sesame seeds

Sea Bass Tartare
- 400 g of fresh sea bass filets
- 1/2 red pepper
- 1 fresh tomato
- 1 spring onion, finely snipped

Citrus Sauce
- 4 tbsp of citrus scented olive oil
- juice of 1 lemon or lime
- sea salt and pepper

Method :
To prepare the breadsticks
Mix together all the ingredients except the sesame seeds, kneading by hand to form a ball.  Place the dough in a bowl cover with a clean tea towel and set aside to rise for 30 minutes.
Divide into 20 portions and roll each portion into a long sausage shape.
Place the sticks on a non-stick baking tray. Sprinkle over the sesame seeds and bake in a preheated oven at 200°C for 20 minutes.

To prepare the tartare
the fish, pepper and tomato into tiny pieces. Put aside in the fridge.
Mix all the ingredients for the citrus sauce. Just before serving, gently mix the sauce with the fish, sprinkle over the snippets of spring onion and serve with the breadsticks.
