To create a Vin Doux Naturel, part of the natural sugar of the grapes must be retained. To achieve this, 5 to 10% of pure alcohol of vinic origin is added to the must to halt the fermentation process. This is known as "mutation" or "fortification".
Muscat de Rivesaltes made from Muscat Petit Grain and Alexandria grapes is bottled early to conserve all its fruity aromas.
In the 14th century, it was customary in the Court of the Kings of Majorca to taste the first Muscat of the year during the Nativity celebrations.
Muscat de Noël was created to continue this wonderful gourmet tradition.

Rancio sec

Indication géographique protégée

Grenache blanc, Macabeu.

Grapes are harvested when over-ripe and processed into white wine. The wine is then aged in an oxidative environment for 5 years in glass bottles exposed to the sun and in oak barrels in our cellars. Rich and taut, it has a lovely aromatic intensity, punctuated with rancio. The finale is a good balance of salinity and bitterness.

The Rancio Sec du Roussillon make up a unique range of wines. These ancient wines were used as thirst quenchers for grape pickers, as well as to make sauces for several traditional Catalan dishes. They are similar to the oxidative wines of southern Spain. Having been rescued from the brink of neglect by a few passionate winemakers, they are now back in the limelight. Ideal to enjoy as aperitifs, served with anchovies, olives, tapas of Iberian cured meats and mature cheeses.
